The Itria Valley is the part of the Murgia that comprises the entire territories of Locorotondo, Martina Franca and Cisternino and includes part of the countryside of Alberobello, Ostuni, Ceglie Messapica and Fasano. What makes the Itria Valley special? The limestone typical of the Murgia here takes a variety of forms, we find it in the dry-stone walls that line roads and properties, in the jazzi, we see it moulded into casedde, trulli, cummerse, lamie, and masserie. Typical products of the area are olive oil, which serves as the base for delicious preparations such as frise, taralli, orecchiette con le cime di rapa or with caciocavallo and fresh tomatoes, and wine, from full-bodied primitivo to fruity Verdeca.
